Method
- Preheat the oven to 350 F and prepare a mini cupcake pan with non-stick spray.
- In a bowl, stir together the peanut butter, egg and sweetener until a dough forms.
- Separate the dough into 9 evenly sized balls.
- Press the balls into the bottom of each mini cupcake cavity and bake for 12-15 minutes and golden brown.
- Remove from the oven and immediately press an unwrapped mini peanut butter cup into the center of each cookie.
- Let cool completely, about 1 hour before removing and serving.
