COOKIES & CREAM RASPBERRY CHEESECAKE BARS
Ingredients
Crust:
- 1 cup almond flour
- 1 Quest Cookies and Cream Hero Bar, chopped
- 1 tbsp coconut flour
- ½ tbsp unsweetened special dark cocoa powder
- Pinch salt
- 3 tbsp butter, cold
Filling:
Topping:
- ½ cup sugar free chocolate chips
- 2 tsp coconut oil
- 2 cups raspberries
Method
- Preheat the oven to 350 F and prepare an 8×8 inch pan with parchment paper.
- Place the almond flour, Hero Bar pieces, coconut flour, cocoa powder and salt into a food processor andblend until combined.
- Add in the butter and pulse until a dough forms. Press the dough into the bottom of the pan and bake for 8-10 minutes. Let cool.
- In a small bowl, whisk together the water and gelatin and set aside.
- In a larger bowl, whisk together the yogurt, heavy cream, sweetener and protein until smooth. Add in the gelatinmixture and stir until well blended. Cover and chill for 30 minutes.
- Melt the chocolate and coconut oil together and stir until smooth.
- Pour over the top of the cheesecake and tilt the pan in all directions so the chocolate spreads in an even layer.
- Top with raspberries and chill until solid. Cut into 16 bars and serve.
